Orange Fruit Cake with Almonds

Ingredients
- 250 g soft butter
- 200 g coconut sugar
- 4 eggs
- 250 g flour (type 1050)
- 2 tsp Baking powder
- 75 g ground almonds (peeled)
- 1 pinch salt
- 1 Organic Orange
- 50 g dried cranberries
- 200 g dried fruit (dates, raisins, sultanas)
- 2 tbsp almond flakes

Beat butter with coconut sugar until creamy, then add eggs one at a time, stirring for about 1 minute per egg. Mix in flour, baking powder, almonds and salt briefly. Wash the orange hot, dry it, grate the zest and squeeze out the juice. Toss dried fruit (chopped if desired) with orange zest and 3 tbsp of juice.

Pour batter into a parchment-lined pan and smooth the top. Sprinkle almond flakes over the surface and bake in a preheated oven at 180 °C (160 °C fan; gas: level 2–3) for about 70 minutes, checking with a skewer. If the cake browns too quickly, cover it with parchment paper. Remove from oven, let cool slightly, lift out of the pan and allow to cool completely on a wire rack.
