Spoonsparrow Vegan Apple Pie: The classic covered apple cake tastes great for the whole family!

Ingredients

  • 330 g spelt flour type 1050 (+ 1 tbsp for handling)
  • Salt
  • 195 g margarine
  • 5 large apples (e.g., Boskop, Elstar, Jonagold)
  • 125 g sugar
  • 1 tsp ground cinnamon
  • 1 pinch nutmeg

Instructions

    In a large bowl combine 300 g flour and 1 tsp salt. Cube 175 g margarine, add to the flour mixture and break into crumbs. Add 4–5 tbsp cold water and knead into a firm, smooth dough. Shape on floured surface into a ball, halve, cover and chill for about 30 minutes.

    Meanwhile peel and quarter the apples. Remove cores and slice quarters. Mix 100 g sugar with remaining flour, cinnamon, nutmeg, and a pinch of salt. Fold in the apple slices.

    Roll out both dough pieces on floured surface slightly larger than the pie tin. Trim uneven edges and line the tin with one dough circle. Press down the bottom and sides. Distribute apples evenly.

    Scatter remaining butter crumbs over the filling and place the second dough half on top. Press the edge and, using a spoon handle, create a typical ridged pattern. Score the lid 5–6 times. Sprinkle the vegan apple pie with leftover sugar.

    Bake in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for about 50 minutes until golden brown. If the crust darkens, cover with parchment paper. Let the vegan apple pie cool on a rack before serving.
