Vegan dessert: Our vegan apple muffins are perfect for gifting, bringing along, and snacking.
Ingredients
- 250 g apples (2 apples)
- 150 g spelt whole‑grain flour
- 100 g oats (soft‑tooth)
- 2 tsp Baking powder
- 1 tsp Baking Soda
- 3 tbsp apple sauce
- 100 g brown sugar
- 1 pinch cinnamon
- 1 Tbsp vanilla sugar
- 75 ml rapeseed oil
- 100 g soy yogurt
- 75 ml soy drink (soy milk)
- 1 tbsp whole oat flakes

Preheat the oven to 200°C (400°F) with fan‑less heat. Line a muffin tin with paper cups. Peel and grate the apples coarsely. In a bowl, mix the flour, oats, baking powder, and baking soda. In another bowl, whisk together the apple sauce and sugar. Add cinnamon, vanilla sugar, and oil. Then stir in the yogurt and soy milk, followed by the dry mixture. Fold in the grated apples and spoon the batter into the muffin cups.

Bake for 25–30 minutes until a toothpick comes out clean. Let cool before serving, sprinkled with oat flakes.
