Apple Rings in Dough

Spoonsparrow Apple rings baked in a crispy dough coating.
Ingredients
- 5 large apples (e.g., Boskop)
- 2 tbsp lemon juice
- 2 tbsp sugar
- 2 tbsp rum (or non-alcoholic rum)
- 200 g Flour
- 1 pinch salt
- 250 ml beer (or white wine or milk)
- 2 eggs (separated)
- 2 tsp oil
- butterclarified fat for frying
- sugar-cinnamon mix for dusting
Instructions

Poke out the core of each apple, peel them, cut into thick rings, lightly drizzle with lemon juice, sprinkle with sugar, soak in rum and let absorb.

Heat clarified butter in a deep pan for frying.

Whisk egg whites to stiff peaks and set aside. Mix flour, salt, and beer into a thick batter. Fold in yolks and oil, then gently fold in the beaten egg whites.

Coat each apple ring individually with the dough and fry until golden brown while floating in hot fat. Drain briefly, dust hot rings with sugar-cinnamon mix, and serve.
