Plum Compote Recipe
The delicious plum compote from Spoonsparrow is a great way to preserve the sweet fruit.
Ingredients
- 1.5 kg plums
- 80 g coconut blossom sugar
- 250 ml apple juice
- 1 lemon
- 1 vanilla pod
- 1 cinnamon stick

Wash the plums, halve them, pit and quarter them.

Heat the coconut blossom sugar in a saucepan over low heat until it lightly caramelizes, then deglaze with 50 ml of apple juice.

Squeeze the juice from the lemon. Add the remaining apple and lemon juice to the sugar and bring to a boil.

Meanwhile split the vanilla pod lengthwise, scrape out the seeds with a knife, and add both the seeds and the pod along with cinnamon and plums into the liquid. Cook the plums for 10–15 minutes over medium heat until they begin to break down.

Fill clean jars with the hot mixture up to the rim. Place the jars upside down for about 10 minutes, then flip them back over and let the plum compote cool.
