Veal Liver with Mashed Potatoes

- 500 g veal liver (sliced)
- 2 tart apples
- 4 onions
- 1 tbsp Lemon Juice
- 2 tbsp flour
- Salt
- Pepper
- 4 tbsp butter
- 650 g starchy potatoes
- 150 g heavy cream
- 40 g Butter
- Salt
- Pepper

Peel, wash, and cut the potatoes into pieces; boil in salted water for about 25 minutes. Drain, mash, and mix with hot cream and butter; season with salt and pepper, keep warm.

Wash and pat dry the liver, removing all membranes. Peel the apples and core them. Peel the onions and slice them; cut the apples into ~8 mm thick rings and drizzle with lemon juice. Preheat the oven to 75°C (167°F).

Mix flour with salt and pepper, then coat the liver slices. Heat 2 tbsp butter in a pan and sear each side of the liver for 3 minutes; remove and keep warm in the oven. Add the remaining butter to the pan, bake the apple rings until golden on both sides, place them over the liver. Sauté onion slices in the leftover butter and spoon over the apples.
