Ingredients
- 1 onion
- 1 kg mostly waxy potatoes
- 1 egg
- 100 g wheat flour type 1050
- Salt
- Pepper
- 3 tbsp Rapeseed oil

Peel and finely grate the onion. Peel, wash, and grate the potatoes raw with the onions. Squeeze out excess liquid.

Carefully mix the egg and flour into the potato mixture. Season heavily with salt and pepper. Heat a pan with oil, spoon 2 tbsp of batter for each pancake, flatten, and fry until golden brown on both sides.

Keep the potato pancakes warm in an oven at 80 °C (convection 60 °C; gas: level 1) until all are cooked. Briefly place them on kitchen paper to drain, then serve hot.
