Veal Liver Sausage

Ingredients
- 450 g veal (lean)
- 400 g veal liver
- 2 onions
- 150 g bacon
- 1 bunch marjoram
- Salt
- pepper (ground)
- Nutmeg (freshly grated)

Dice the meat.

Wash, clean and cut the liver into pieces.

Peel and finely dice the onions.

Cut the bacon into small cubes as well.

Chop the marjoram leaves.

Render the bacon in a pan, then add the onions. Add the meat and cook for about 15 minutes while stirring. Blend this mixture with half of the liver and marjoram in a blender until smooth. Fold in the remaining liver and season heavily with salt, pepper, and nutmeg.

Fill prepared jars with the liver mixture and seal them. Place the jars in a pot and fill with water up to the rim of the jars. Simmer for about 1 hour. Remove and let cool.
