Ingredients

  • 1 dried chili pepper (crushed in mortar)
  • 1 T-Bone steak
  • salt (pepper)
  • 1 very finely chopped garlic clove
  • Vinegar
  • olive oil
  • 2 rosemary sprigs

Instructions

    Wash the steak, pat dry, brush with a little olive oil and season with salt and pepper.

    Grill the T‑Bone steak on both sides until the pores close; reduce heat so the meat isn’t too hot, then grill to desired doneness (rare to well done) for 3–5 minutes per side.

    Periodically brush with a mixture of olive oil, garlic, rosemary (and chili).
