Cod Patties in Tomato Sauce

Ingredients
- 1 red chili pepper
- 2 onions
- 2 Garlic cloves
- 3 tbsp olive oil
- 2 tbsp tomato paste (15 g each)
- 600 g diced tomatoes (canned)
- 1 tsp ground cumin
- Salt
- Pepper
- a handful parsley
- 500 g Cod fillet
- 50 g Heavy cream
- 0.5 tsp ground coriander
- 2 tbsp whole wheat breadcrumbs (15 g each)
- 1 egg
- 3 tbsp Rapeseed oil

For the tomato sauce, halve the chili pepper lengthwise, deseed, wash and chop. Peel one onion and garlic cloves and finely chop both. Heat olive oil in a pot. Sauté onion and garlic for 3 minutes over medium heat. Add tomato paste, tomatoes and chili. Season with ½ tsp cumin, salt and pepper. Cover and simmer for 10–15 minutes over low heat.

Meanwhile, peel the remaining onion and finely dice it. Wash parsley, pat dry and chop. Pat cod fillet dry. Blend half of the fish with cream in a food processor until fine and transfer to a bowl. Dice the rest of the fish finely and add with onion cubes, remaining cumin, coriander and half the parsley. Season with salt and pepper, add breadcrumbs and egg, and knead into a moldable mixture. Shape eight balls and flatten them slightly.

Heat rapeseed oil in a large pan. Brown cod patties for 4–5 minutes on each side over medium heat. Warm tomato sauce briefly if needed and taste. Place cod patties in the sauce, sprinkle with remaining parsley and serve.
