Various Macarons

Ingredients
- 4 egg whites
- 2 tsp lemon juice
- 250 g very fine sugar
- 200 g ground almonds
- Food coloring (as desired)
- 100 g white couverture chocolate
- 2 Tbsp whipping cream
- 30 g Butter
- Food coloring (as desired)

Preheat the oven to 150°C fan. Beat the egg whites with the lemon juice into a very stiff foam, gradually add the sugar while continuing to beat until a firm, glossy batter forms. Gently fold in the almonds, divide the dough and color it differently using food coloring of choice.

Fill a piping bag fitted with a large round tip with the batter and pipe small half-spheres about 2 cm onto a baking sheet lined with parchment paper. Bake the macarons in the preheated oven for about 35 minutes, leaving a sliver open in the oven door to allow steam escape.

For the filling, chop the couverture chocolate into small pieces and melt it over a hot, non-boiling water bath. Whisk the cream and butter into small chunks with a whisk. Divide the melted mixture and color it as desired. Let the filling cool slightly.

Spread half of the macarons with the various fillings and assemble them with their matching counterparts.
