Various Bagels

Ingredients
- 500 g spelt flour type 1050
- 1 cube fresh yeast (42 g)
- 1 tsp Honey
- 1 tsp salt
- 1 tbsp light sesame seeds
- 1 tbsp poppy seeds

Add the flour to a bowl and press a well in the center. Dissolve the yeast and honey in 150 ml lukewarm water and pour into the well. Mix with a little flour, cover and let rest in a warm place for 15 minutes. Sprinkle salt on the edge of the flour and stir everything together while adding the remaining 150 ml water. Knead with the dough hooks of a hand mixer for 4–5 minutes, then cover and leave to rise in a warm place for 1 hour. If the dough is too wet, incorporate more flour; if it’s too dry, add a little more lukewarm water.

Knead the dough again, shape into a log and divide into eight equal portions. Form each portion into a rope about 30 cm long and join the ends to create rings. Press the ends firmly together. Bring a pot of plenty of water to a boil and drop the dough rings in one at a time for about 1 minute. Remove, drain and place on a baking sheet lined with parchment paper. Sprinkle the bagels with sesame, poppy or a mixture if desired and let rise again for 15 minutes. Bake in a preheated oven at 225 °C (fan: 200 °C; gas: level 3–4) for about 25 minutes until golden brown.
