The blackberry quark from Spoonsparrow is ideal as a fruity dessert or on-the-go snack.

Ingredients

  • 500 g fresh ripe blackberries
  • 500 g Low-fat quark
  • 4 tsp honey
  • 1 vanilla pod

Instructions

    Rinse and wash the blackberries, finely puree 125 g and strain through a sieve.

    Combine the quark with the puréed blackberries and honey. Split the vanilla pod lengthwise, scrape out the seeds with a knife and stir into the quark mixture.

    Set aside a few whole berries for garnish, fold the remaining berries into the quark batter. Spoon the blackberry quark into glasses, decorate with extra berries, and serve.
