Vanilla Tart with Figs

Ingredients
- 250 g flour
- 1 pinch salt
- 75 g sugar
- 1 egg
- 160 g butter
- 1 packet vanilla pudding powder (for 500 ml liquid)
- 400 ml milk
- 3 tbsp sugar
- 2 tbsp powdered sugar (for dusting)
- flour (for the work surface)
- butter (for the pan)
- 10 ripe figs
- 2 tbsp powdered sugar (for dusting)

Mix flour with salt and sugar, sift onto a work surface, create a well in the center and crack the egg into it. Distribute butter around in small pieces and use a knife to crumble all ingredients together. Quickly knead by hand into a smooth dough, shape into a ball, wrap in cling film and refrigerate for 30 minutes.

Preheat oven to 180°C (convection). Meanwhile whisk pudding powder with 3 tbsp milk until smooth. Bring remaining milk and sugar to a boil in a saucepan. Pour the pudding mixture in and thicken while stirring. Transfer pudding to a bowl, dust with powdered sugar, and let cool. Roll out dough on floured surface slightly larger than pan and line greased pan with it.

Create a raised edge. Line bottom with parchment paper and legumes, bake in preheated oven for 20-25 minutes. Remove and cool. Trim figs and halve lengthwise. Remove parchment and legumes from dough base, spread pudding over it, top with fig halves (cut side up). Slide tart under the hot grill for about 5 minutes. Take out and dust with powdered sugar before serving.
