Ingredients

  • 250 g flour
  • 125 g cold butter
  • 1 pinch salt
  • 1 egg
  • 150 g flour
  • 4 eggs
  • 50 ml milk
  • Salt
  • pepper (ground)
  • nutmeg
  • 2 tsp chopped dill sprigs
  • 750 g potatoes
  • 2 onions
  • 2 Garlic cloves
  • 300 g smoked fish
  • 50 g butter

Instructions

    Sift the flour onto a work surface, mix with salt and press a well in the center. Cut the cold butter into small pieces, distribute around the well, add the egg, pour in about 2-3 lukewarm water, and use a knife to cut through all ingredients until small dough crumbs form. Quickly knead by hand into dough, shape into a ball, wrap in cling film and chill for about 30 minutes.

    Whisk flour with eggs and milk into a smooth, thick batter and season with salt, pepper, nutmeg, and dill; taste and adjust.

    Peel potatoes, grate roughly, and stir into the batter. Peel onions and garlic. Dice onions finely; mince garlic. Break smoked fish into small pieces.

    Heat 1 tbsp butter in a pan, briefly sauté onion cubes. Add garlic, cook, then mix with smoked fish into the potato batter.

    Grease a tart tin with butter. Roll out dough on lightly floured surface and line the tin. Pour mixture in and smooth top. Dot remaining butter in small flakes over the surface. Bake in preheated oven at 180°C (middle rack) for about 50 minutes. Remove, cut into pieces, and serve e.g., with a crisp salad.
