Lemon Tart

Ingredients

  • 200 g Flour
  • 125 g butter
  • 50 g sugar
  • 1 pinch salt
  • 1 egg yolk
  • butter (for pan)
  • flour (for surface)
  • 200 g lemon marmalade
  • 2 fresh lemons

Instructions

    Mix the flour with the sugar on a work surface and sift. Create a well in the center, spread the cut butter around it. Crack the egg into the well and roughly chop all ingredients with a knife to form crumbs. Quickly combine everything into dough, shape into a ball, wrap in cling film and chill for at least 30 minutes.

    Preheat the oven to 200 °C (Oven + fan). Butter a tart pan. Roll out the dough on a floured surface slightly larger than the pan. Line the pan with dough, lift up the edges and bake in the preheated oven for 10–15 minutes. Remove and let cool briefly.

    Heat the lemon marmalade and spread it over the cooled crust. Rinse the lemons hot, dry them, slice into rounds and arrange on top of the tart. Bake in the oven another 10–15 minutes until set. Remove, allow to cool completely, carefully lift out of the pan and serve on a plate.
