Vanilla Rice Pudding with Plum-Apple Compote

Spoonsparrow presents a quick try of Vanilla Rice Pudding with Plum-Apple Compote!

Ingredients

  • 0.5 Vanilla bean
  • 500 ml milk (1.5% fat)
  • Salt
  • 4 tbsp Honey
  • 150 g ORYZA organic rice pudding
  • 1 apple
  • 300 g plums
  • 100 ml plum juice (or apple juice)
  • 1 star anise
  • 2 cloves of spice cloves
  • 0.5 cinnamon stick
  • 1 tsp Cornstarch
  • 20 g dark chocolate (at least 70% cocoa)

Instructions

    Split the vanilla bean lengthwise and scrape out the seeds with a knife. Add milk, vanilla seeds, vanilla pod, a pinch of salt, and 2 tbsp honey to a pot. Stir in ORYZA organic rice pudding and bring to a boil, stirring occasionally. Cook the rice gently on low heat for 20 minutes with the lid on, stirring once halfway through. After 20 minutes stir well again. Turn off the stove and let the rice sit on residual heat for 5–10 minutes to thicken.

    In the meantime, peel, core, and dice the apple; wash, halve, and pit the plums. Combine both with remaining honey, 80 ml plum juice, star anise, cloves, and cinnamon stick in a pot. Cover and simmer gently on low heat for about 5 minutes until soft. Mix cornstarch with the remaining juice, stir into the fruit, and simmer for another 3 minutes until the compote slightly thickens.

    Remove from heat, discard the spices, and let cool for 15 minutes. Grate the chocolate. Stir the rice again, then serve both the rice and compote in bowls, sprinkled with grated chocolate.
