Oyster Mushrooms with Arugula

The oyster mushrooms with arugula and chives in thyme vinaigrette are rich in vitamin D, great for healthy cell growth.

Ingredients

  • 1 Shallot
  • 2 sprigs thyme
  • 125 g oyster mushrooms
  • 1 tsp Olive oil
  • 1 tbsp balsamic vinegar
  • 3 tbsp classic vegetable broth
  • Salt
  • Pepper
  • 10 leaves arugula
  • 0.25 bunch chives

Instructions

    Peel and finely chop the shallot.

    Wash the thyme, shake dry, and strip off the leaves.

  3. 3.

    Clean the oyster mushrooms, wash gently, and cut in half if large.

    Heat the oil in a non-stick pan over low heat and sauté the shallot until translucent. Add the thyme and mushrooms and cook briefly.

    Add vinegar and broth, cover, and simmer for about 5 minutes over medium heat.

    Meanwhile, wash, shake dry, and chop or roll the arugula and chives. Season the mushrooms with salt and pepper, place on a plate, and sprinkle with arugula and chives before serving.
