Vanilla Pudding with Chocolate Shavings

Ingredients
- 250 ml milk (3.5% fat)
- 25 g cornstarch (2.5 tbsp)
- 0.5 small vanilla bean
- 1 tbsp honey
- 10 g dark chocolate shavings (1.5 tbsp)

Take 50 ml of milk and put it in a screw-top jar. Add the cornstarch, seal the jar, and shake until there are no lumps.

Rinse a small pot with cold water. Split the half vanilla bean lengthwise and scrape out the seeds.

Add the vanilla bean and seeds to the pot with the remaining milk and bring to a gentle boil over low heat.

Whisk the starch mixture into the boiling milk using a whisk, stirring constantly for 1 minute until it thickens. Stir in the honey and remove the pudding from the heat.

Let the pudding cool slightly, then remove the vanilla bean. Quickly fold the chocolate shavings into the lukewarm pudding with a whisk. Spoon into bowls and serve (or let cool further and refrigerate).
