Vanilla Parfait with Fresh Strawberries

Ingredients

  • 3 eggs
  • 1 Vanilla bean
  • 75 g powdered sugar
  • 250 ml Whipping Cream
  • 1 tsp lemon juice
  • oil (for the mold)

Instructions

    Separate the eggs and place the egg whites in a large bowl to chill. Put the yolks in a heatproof bowl. Split the vanilla bean lengthwise and scrape out the seeds. Add the seeds and powdered sugar to the yolks. Whisk over a hot water bath with a whisk until thick and frothy. Then cool quickly by beating into ice water.

    Next, whip the cream stiff and fold it into the chilled egg mixture. Beat the egg whites with lemon juice stiffly and fold them into the ice cream base.

    Oil the terrine mold lightly. Line it overhanging with plastic wrap, pour in the parfait mixture and smooth the surface. Cover with foil and freeze completely for at least 6 hours.

    Take the ice about 10 minutes before serving out of the cold. Unpack the half-frozen portion, pour it out and remove all foil.

    Slice into rounds (best with a knife briefly dipped in hot water) and serve garnished with a sweet sauce or fresh fruit as desired.
