Ingredients
- 150 g sugar
- 100 g whipping cream
- 20 g butter
- 1 vanilla pod (aroma)
- 200 g Flour
- 2 tsp Baking powder
- 2 tbsp Cornstarch
- 1 Banana
- 1 pinch salt
- 3 eggs
- paper muffin cups
- 1 muffin tin (with 12 cavities)
- powdered sugar (for dusting)
Instructions

Place paper cups into the cavities of the muffin tin. Bring 100 g sugar, cream and butter to a boil. Add vanilla aroma and simmer over low heat for 5 minutes, then let cool to lukewarm.

Mix flour, baking powder and cornstarch. Peel and puree the banana, then whisk with the vanilla cream, remaining sugar and salt. Beat in the eggs. Quickly fold in the dry mixture.

Fill the batter into the muffin tin cavities. Bake in a preheated oven at 180°C fan-forced on the middle rack for about 20 minutes. Then let cool in the tin for 5 minutes before removing and cooling on a wire rack.

Serve dusted with powdered sugar.
