Ingredients
- 1 Vanilla bean
- 0.125 l whipping cream
- 0.25 l milk
- 3 egg yolks
- 100 g sugar

Slice the vanilla bean and heat it with the cream and milk. Remove the bean. Whisk the egg yolks with the sugar until frothy, then gradually pour in the hot cream-milk mixture while whisking over a bain‑marié to thicken into a rich custard.

Pour the vanilla sauce into a saucepan or a nice jug, let it cool, and dust the surface lightly with sugar to prevent skin formation.
