Vanilla Muffins

Ingredients

  • 150 g sugar
  • 100 g whipping cream
  • 20 g butter
  • 1 vanilla bean (pulp)
  • 200 g Flour
  • 2 tsp Baking powder
  • 2 tbsp Cornstarch
  • 1 small Banana
  • 1 pinch salt
  • 3 eggs
  • butter (for the pan)
  • 1 muffin tin (with 12 cavities)
  • 125 g white couverture chocolate
  • 1 tbsp whipping cream

Instructions

    Grease the muffin tin cavities. Boil 100 g sugar, cream and butter together. Add vanilla pulp and simmer over low heat for 5 minutes, then let cool to lukewarm.

    Mix flour, baking powder and cornstarch. Peel and puree the banana, then whisk with the vanilla cream, remaining sugar and salt. Beat in eggs. Quickly fold in the dry mixture.

    Fill the muffin tin cavities with batter. Bake in a preheated oven at 180°C fan on the middle rack for about 20 minutes. Cool in the pan for 5 minutes, then remove and cool on a wire rack. Melt the white chocolate in a double boiler. Stir in cream until smooth and brush over the muffins.
