Ingredients

  • 4 egg yolks
  • 5 sheets white gelatin
  • 80 g sugar
  • 50 g white chocolate
  • 0.25 l hot milk (not boiling)
  • 1 vanilla bean seed
  • 0.25 L whipping cream
  • Chocolate shavings (for garnish)
  • Mint leaves (for garnish)

Instructions

    Soak gelatin in cold water.

    Whisk egg yolks and sugar over a hot water bath until frothy. Melt chocolate with vanilla seed in milk, then slowly fold into the egg mixture. Stir until creamy and add squeezed gelatin. Remove from heat and chill over a cold water bath. When the cream starts to set, fold in whipped cream and pour into glasses. Chill for at least 2 hours.
