Vanilla Cream with Peaches

- 0.5 l milk
- 1 Vanilla bean
- 5 egg yolks
- 100 g sugar
- 30 g flour
- 1 pinch salt
- 2 peaches
- 100 g whipping cream
- cherry for garnish
- walnut kernels

Slice the vanilla bean lengthwise, scrape out the seeds and stir them into the milk, then bring to a boil.

Whisk the egg yolks with the sugar in a bowl until creamy, then fold in the flour.

Pour the boiling milk into the egg yolk mixture, return everything to the pot, remove the vanilla bean, and simmer over low heat while stirring constantly until it thickens.

Strain the custard through a sieve, let cool, dusting the surface lightly with sugar to prevent skin formation.

Poach the peaches, shock them in cold water, peel, halve, pit, and cut into small pieces.
