Vanilla ice cream with berries

- 0.5 l milk
- 0.25 l heavy cream
- 1 Vanilla bean
- 7 egg yolks
- 200 g sugar
- 20 ml cognac
- Strawberries (fresh)
- Raspberries (fresh)
Instructions

Slice the vanilla bean lengthwise, scrape out the seeds and stir them into the milk‑cream mixture until it boils.

Beat the egg yolks with the sugar in a bowl until creamy.

Whisk the boiling milk into the yolk mixture, return everything to the pot, remove the vanilla bean and cook over low heat with a wooden spoon until the custard thickens; do not let it boil.

Strain the vanilla custard through a sieve, stir in the cognac, cool over ice water while stirring occasionally.

Pour the cold custard into a shallow metal bowl, cover and freeze (or pour into an ice cream maker).

Serve scoops of ice cream in bowls and garnish with berries.
