Vanilla Chocolate Dessert with Pickled Cherries

- 75 g dark chocolate
- 30 ml brewed, cooled espresso
- 2 sheets white gelatin

- 20 g vanilla sugar
- 100 ml chilled whipped cream (at least 30% fat)

- 60 ml cherry juice
- 20 ml cherry liqueur
- 4 candied cherries

For the dark mousse, roughly chop the chocolate and melt it with the espresso over a hot water bath that is not boiling. Remove from heat. Soak the gelatin in cold water.

Separate the eggs; beat the yolks with vanilla sugar over another hot water bath until the sugar dissolves. Squeeze out excess water from the gelatin and dissolve it in the yolk mixture. Whip the chilled cream stiffly.

Beat the egg whites with sugar into stiff peaks. Add the chocolate to the yolk mixture and fold in with a whisk. Fold the whipped cream onto the chocolate mixture, then gently fold in the meringue. Divide the mixture into four glasses and chill for 1 hour.

Repeat the same process for the light mousse as for the dark one. Spread the light mousse over the dark mousse and chill for another 2 hours.

For the liqueur cherries, soak gelatin in cold water, heat cherry juice and dissolve gelatin in it. Stir in the liqueur.

Place a candied cherry in each glass and carefully spoon cherry juice over it. Chill again for 1 hour. Serve the dessert well chilled.
