Vanilla Mascarpone with Apples

Ingredients
- 800 g sour apples
- 125 ml apple juice
- 1 thin lemon (zest)
- 2 EL honey
- Cayenne pepper
- 40 g almond sticks
- 150 g mascarpone
- 2 EL whipping cream
- 2 EL liquid honey
- 0.5 TL ground vanilla
- 2 TL lemon juice
- 1 Banana

Peel, quarter, core the apples and cut into eighths. Bring to a boil with apple juice and lemon zest, cover and simmer over medium heat until slightly firm. Remove about half of the apples.

Steam the remaining apples until soft, puree them, mix with the others, add cayenne pepper and some honey to taste, let cool.

Roast almond sticks without fat in a pan until golden yellow.

Whisk mascarpone with cream, honey, vanilla and lemon juice. Dice banana finely, fold in and season.

Serve apple compote with vanilla cream in bowls, topped with almond sticks.
