Vanilla Apple Clafoutis

Ingredients
- 4 eggs
- 100 g sugar
- 1 Vanilla bean
- 1 pinch salt
- 80 g flour
- 1 tsp Baking powder
- 150 ml milk
- 600 g small apples
- 1 lemon (unprocessed)
- butter (for the pan)
- breadcrumbs (for the pan)
- powdered sugar (for dusting)
Instructions

Beat the eggs with sugar into a voluminous foam. Scrape the vanilla bean and stir its seeds with salt into the foam. Mix flour with baking powder and add it along with the milk. Whisk everything into a smooth batter and cover for about 30 minutes in the refrigerator.

Peel, quarter, cut the apples into wedges, and mix them with grated lemon zest and freshly squeezed juice.

Preheat the oven to 200 °C (top and bottom heat). Grease a pie dish and line it with breadcrumbs.

Stir the batter briefly and pour about one‑third into the dish. Arrange the apples in the pan, press them lightly, then pour the remaining batter over them.

Bake for 30–40 minutes until golden brown, let cool slightly, then dust with powdered sugar before serving.
