Vanilla Ice Cream with Grilled Fruit

Ingredients

  • 1 Vanilla bean
  • 0.5 l milk
  • 0.25 l heavy cream
  • 7 egg yolks
  • 200 g sugar
  • 4 slices pineapple
  • 8 apple wedges
  • 3 tbsp honey

Instructions

    Cut the vanilla bean lengthwise, scrape out the seeds and stir them with the vanilla pod into the cream-milk mixture; bring to a boil then remove from heat. Whisk the egg yolks with the sugar in a bowl until creamy.

    Slowly pour the warm milk into the egg yolk mixture, return everything to the pot, fish out the vanilla pod and whisk over low heat with a wooden spoon until the custard thickens—never let it boil. Cool the custard by placing it over ice water while stirring. Pour the chilled custard into an ice cream maker and churn until ready (or freeze in a shallow metal bowl, stirring every hour during the first hour). This yields about 1 liter of ice cream, roughly 16 servings of 5 cl each.

    For the skewers, halve the pineapple slices and thread them lengthwise onto sticks. Do the same with the apple wedges. Brush the fruit with honey and grill over high heat for about 4 minutes until golden yellow.

    Scoop the ice cream into glasses, placing two scoops per glass. Arrange the fruit skewers on small plates beside the glasses and serve immediately.
