Ingredients

  • 300 ml heavy cream
  • 2 Eggs
  • 100 g sugar
  • 70 ml strong hot coffee
  • 10 ml cognac
  • 170 g dark chocolate couverture
  • 50 g butter
  • 60 ml heavy cream

Instructions

    Bring half of the cream to a boil, then remove from heat. Separate the eggs. Whisk the egg whites until stiff and set aside cold. Beat the yolks with sugar over a hot water bath until creamy. Slowly pour in the hot cream while stirring. Add coffee and cognac, whisking well. Stir the mixture in a cold water bath until fully cooled. Whip the remaining cream stiffly and fold it into the custard along with the beaten egg whites. Pour the mixture into an ice cream maker and churn to completion, or pour into a metal bowl, cover, and freeze for about 3 hours while stirring occasionally to prevent large crystals.

    Take chocolate shavings with a sharp knife for garnish. Melt the remaining chocolate over a hot water bath, stir in butter, and let cool slightly. Whip the cream stiffly.
