Ingredients

  • 50 g dark chocolate couverture
  • 5 tbsp sugar
  • 1 pinch salt
  • 125 ml espresso
  • 200 g mascarpone
  • 150 ml heavy cream (at least 30% fat)

Instructions

    Melt the chocolate and fill a piping bag; place small dots on parchment paper and let dry. In a small pot caramelize the sugar with salt until golden brown, deglaze with espresso and reduce for about 3-4 minutes. Transfer to a bowl and cool.

    Stir in the mascarpone. Whip the heavy cream to stiff peaks and fold gently into the coffee mixture. Spoon the coffee cream into cups and serve garnished with chocolate dots as desired.
