Vanilla Cream with Fruit Skewers

Ingredients
- 2 tbsp Cornstarch
- 1 tsp bourbon vanilla
- 2 tbsp sugar
- 500 ml milk
- 250 g mascarpone
- 250 g low‑fat quark
- 3 tbsp sugar
- 1 large pineapple
- 3 apples
- 3 bananas
- 5 Oranges
- 300 g blue grapes
- juice of 1 lemon
- 8 long wooden skewers
- chocolate shavings
Instructions

Heat milk with sugar and vanilla. Dissolve cornstarch in 2 tbsp milk, pour into hot milk, stir until thickened. Bring to a brief boil while stirring, remove from heat, cover and let cool.

Place mascarpone and quark in a bowl, gradually fold in the vanilla sauce. Taste and adjust sweetness with about 3 tbsp sugar.

Peel pineapple, quarter it, remove core, cut flesh into small pieces. Wash apples, quarter them, core and slice into wedges or chunks. Peel bananas and slice. Peel oranges thickly to remove white pith, then cut fruit fillets with a sharp knife. Rinse grapes. Mix all fruit in a bowl with lemon juice, cover and refrigerate.

Thread some fruit pieces onto each of the 8 skewers, garnish with mint if desired. Keep remaining fruit aside. Spoon vanilla cream into dessert bowls, garnish with chocolate shavings as preferred.
