Ingredients

  • 400 g mixed berries (e.g., strawberries, raspberries, blueberries)
  • 2 sprigs Mint
  • 20 ml raspberry liqueur
  • 1 untreated lime (zest and juice)
  • 2 tbsp honey
  • 1 Vanilla bean
  • 350 g mascarpone
  • 150 g Low-Fat Quark
  • 60 g powdered sugar
  • 250 ml heavy cream
  • powdered sugar for dusting

    Wash the berries gently, drain them, and pat dry with paper towels. Slice the mint into strips. Cut the berries into pieces according to size and marinate them with raspberry liqueur, 1/2 tsp lime zest, mint, and honey for about 30 minutes.

    Split the vanilla bean lengthwise and scrape out the seeds. Whisk together mascarpone, quark, powdered sugar, vanilla seeds, and lime juice until smooth. Beat the heavy cream to stiff peaks and fold it into the mascarpone mixture.

    Spoon the creamy filling into dessert glasses and top with the marinated berries. Dust lightly with powdered sugar before serving.
