Two‑Tone Tomato Puree on Creamy Vanilla Cheese for the Thermomix®

A wonderful idea for a summer starter: two‑tone tomato puree on a creamy vanilla cheese base for the Thermomix by Spoonsparrow.

Ingredients

  • 1 Vanilla bean
  • 150 g low‑fat cream cheese (0.2% fat)
  • 50 g Heavy cream
  • 1 pinch sugar
  • Salt
  • Pepper
  • 4 yellow cherry tomatoes
  • 350 g orange cherry tomatoes
  • 350 g red cherry tomatoes
  • 1 small handful basil leaves

Instructions

    Slice the vanilla bean lengthwise, scrape out the seeds, and add them with the cream cheese and heavy cream to the mixing bowl. Blend on speed 3 for 30 seconds until smooth. Season with sugar, salt, and pepper, then blend again for 10 seconds. Spoon into four glasses, chill, and rinse the mixing bowl.

    Meanwhile, steep the tomatoes in hot water, drain, cool, and peel. Set aside four yellow tomatoes and four from each of the other two varieties. Sort the remaining tomatoes by color, starting with the reds, and add them to the mixing bowl. Puree on speed 5 for 30 seconds. Season with salt and pepper, transfer to a serving dish, and rinse the mixing bowl.

    First layer the red tomato puree over the cream cheese, then the orange puree, and chill until ready to serve.

    While waiting, wash and dry the basil leaves. Sprinkle the remaining tomatoes and basil over the layers. If desired, quarter the vanilla bean lengthwise and use it as a garnish on top.
