Ingredients
- 12 large shrimp tails
- 15 g fresh ginger (about 3 cm)
- 15 g fresh galangal (about 3 cm)
- 2 cloves garlic
- 4 dried chili peppers
- 2 tbsp sesame oil
- 4 lime leaves
- 1 stalk lemongrass
- 2 tbsp fish sauce (more if desired)
- 2 tbsp lemon juice
- 0.25 bunch fresh herbs for garnish (coriander, Thai basil)

Peel the shrimp up to the tail segment, devein, rinse and pat dry. Peel and finely chop the roots. Peel and halve the garlic. Sauté the chopped roots (except 1 tbsp), shrimp shells, and 2 chilies in hot oil for 2-3 minutes. Deglaze with about 800 ml water.

Add the lime leaves and halved lemongrass, simmer gently for about 20 minutes. Strain through a sieve, season with fish sauce and lemon juice. Add the shrimp, remaining roots and chilies, and let them finish cooking over low heat for about 3 minutes. Serve garnished with fresh herbs.
