Ingredients
- 1 medium onion
- 3 Garlic cloves
- 1 tbsp plant oil
- 300 g broccoli
- 300 g celery stalks
- 650 ml vegetable broth
- 100 g Baby spinach
- 1 tsp turmeric powder
- Salt
- Pepper
- 125 g coconut‑based yogurt
- 50 g peeled American pistachios
Instructions

Peel and roughly chop the onion and garlic. Warm the oil in a pot over medium heat and sauté the onion and garlic.

Wash and cut the broccoli and celery into pieces. Add both to the pot and sauté for 2–3 minutes. Pour in vegetable broth, cover, and simmer for 15 minutes.

Wash and rinse the spinach. Remove the pot from the heat, add the spinach, and let it wilt in the pot. Puree the soup finely, then stir in turmeric, salt, and pepper and blend again.

Serve the soup in bowls, topped with coconut yogurt and chopped pistachios.
