Ingredients
- 1 onion
- 800 g boiled potatoes
- 250 g diced pork belly
- 2 tbsp pork lard
- Salt
- Pepper (freshly ground)
- 0.5 tsp cumin (ground)
- 4 eggs
- 2 tbsp Vegetable oil
- 2 tbsp freshly chopped parsley

Peel and finely dice the onion. Peel the potatoes and slice them into rounds.

Pan-fry the potato slices in hot butter lard for about 5 minutes until lightly golden. Add the pork belly and onion, then cook everything together for another 4-5 minutes. Season with salt, pepper, and cumin, tasting as you go.

In a separate pan, crack the eggs over hot oil and fry them into sunny-side-up eggs. Season with salt. Divide the potato mixture among four small plates, top each with one fried egg, and sprinkle with chopped parsley before serving.
