Turkish-Style Ground Meat Pizza

Ingredients

  • 150 g quark
  • 3 tbsp heavy cream
  • 6 tbsp oil
  • Salt
  • 300 g flour
  • 2 tsp Baking powder
  • 3 tomatoes
  • 3 tbsp tomato paste
  • 1 bunch thyme leaves
  • 400 g ground lamb
  • 2 tbsp oil
  • black cumin
  • Salt
  • pepper from grinder

Instructions

    Whisk the quark with heavy cream, oil and 1 tsp salt. Add flour and baking powder and knead into a smooth dough; cover and refrigerate for about 30 minutes. On a floured surface knead again and roll into two pizza bases (or four smaller). Press edges slightly up and place on an oiled tray.

    Preheat the oven to 200°C.

    Wash the tomatoes, cut off stems and slice into strips. Brown the ground lamb in hot oil until crumbly; stir in tomato paste and thyme. Season with salt, pepper and black cumin. Spread the mixture over the dough, leaving a 1–2 cm border, then top with tomato strips.

    Bake in the preheated oven for about 25 minutes.
