Turkish-Style Feta and Spinach Pie

Ingredients
- 200 g sheep cheese
- 1 bunch parsley
- 1 onion
- 500 g fresh spinach leaves
- Salt
- Pepper (freshly ground)
- nutmeg
- 125 g butter
- 1 egg
- 125 ml milk
- fat (for greasing the pan)
- 350 g yufka dough sheet

Cut the sheep cheese into small pieces. Finely chop the parsley and sliced onion. Rinse, wash, and drain the spinach in a pot over high heat until it wilts; then squeeze out excess water, cool slightly, and roughly chop. Mix the spinach with the cheese, onion, and parsley, seasoning with salt, pepper, and nutmeg.

Melt the butter without browning it. Beat the egg. First whisk in the milk, then stir in the warm liquid fat. Grease a rectangular ovenproof dish (about 10x20 cm). Lay half of the dough sheets on top, brushing each sheet with the egg mixture. Spread the spinach mixture over them.

Cover with the remaining dough sheets, brushing each one again. Cut the assembled pie into portions with a knife and drizzle the leftover egg mixture over the top. Place in a cold oven (lower rack) and bake at 200 °C on both top and bottom heat for about 40 minutes. Serve warm or cold.
