Beef Pot Pie

Ingredients
- 800 g beef (for stewing)
- 400 g potatoes (starchy)
- 2 onions
- 2 Garlic cloves
- 2 carrots
- 3 tbsp oil
- 2 tbsp flour
- 1 bay leaf
- 500 ml meat broth
- 4 thyme sprigs
- Salt
- black pepper (ground)
- 250 g puff pastry (frozen)
- 1 egg yolk (for brushing)
- fat (for the pan)
Instructions

Wash and pat dry the beef, then cut into cubes.

Peel onions and garlic; finely mince the garlic and roughly chop the onion.

Peel carrots and slice them into rounds.

Heat oil in a stewing pot, sear the beef in batches over high heat. Add onions, carrots, and garlic, season with salt and pepper. Sprinkle flour over the meat, stir briefly to toast, then pour in broth. Add bay leaf and thyme, cover the meat and bake in a preheated oven at 200°C fan for about 1 hour. After this time remove the lid and continue baking for another ~30 minutes.

Roll out the puff pastry and cut circles about 6 cm in diameter. Brush with egg yolk and place on parchment-lined tray. Bake in the oven for about 15 minutes until golden brown.
