Turkey Strips with Sugar Snap Peas and Peas

Ingredients
- 80 g peanut butter
- 100 ml coconut milk
- Salt
- Cayenne pepper
- 400 g sugar snap peas
- 400 g peas
- 2 Spring Onions
- 500 g Turkey breast fillet
- 1 Garlic clove
- 2 tbsp olive oil
- 1 tsp harissa spice mix

Heat the peanut butter with the coconut milk and simmer until creamy. Season with salt and cayenne pepper.

Wash the sugar snap peas and peas, blanch in salted water for 3-4 minutes, then shock and drain. Wash, trim, and slice the spring onions into strips.

Rinse the turkey, pat dry, and cut into thin strips. Peel, mince, and grate the garlic with a pinch of salt. Mix with oil and harissa, then stir into the turkey. In a hot non‑stick pan, cook for 2-3 minutes until golden brown. Add the sugar snap peas, peas, and spring onions; cook together for another 1-2 minutes. Drizzle over the peanut sauce and sprinkle with harissa before serving.
