Ingredients

  • 2 carrots
  • 4 bell peppers (green and red)
  • 150 g sugar snap peas
  • 150 g shiitake mushrooms
  • 2 handfuls bean sprouts
  • 150 g enoki mushrooms
  • 1 onion
  • 2 Garlic cloves
  • 2 tbsp peanut oil
  • 2 tbsp Light soy sauce
  • 1 tbsp lime juice
  • pepper (ground)

Instructions

    Peel the carrots and finely julienne. Wash, halve, trim, and slice the bell peppers into thin strips. Wash, trim, and cut the sugar snap peas lengthwise into fine strips. Rinse the bean sprouts and drain well. Clean the mushrooms.

    Peel the onion and garlic; mince the garlic finely and slice the onion into strips. In a hot wok with oil, stir‑fry together for about 1 minute. Add all prepared ingredients in sequence, stirring: first carrots, then bell peppers and sugar snap peas. Finally add the mushrooms with bean sprouts and cook until tender. Season with soy sauce, lime juice, and pepper before serving.
