Turkey Steaks with Oranges
Turkey steaks with oranges from Spoonsparrow are always a hit.
Ingredients
- 4 turkey steaks (about 150 g each)
- 2 tbsp clarified butter
- Salt
- ground pepper
- 3 organic oranges
- 1 tbsp honey
- 2 tsp gingerbread spice
- ½ tsp chili powder
- 2 sprigs lemon balm

Wash and pat the turkey steaks dry. Melt 1 tbsp clarified butter in a pan over medium heat. Cook the turkey steaks covered on both sides over low heat, letting them brown more than cook. Season with salt and pepper, lift from the pan, and keep warm. Using a zester, scrape zest from the oranges lengthwise at regular intervals. Slice two oranges into thin rounds; squeeze juice from the remaining orange. Chop the zest finely. Add another tbsp clarified butter and the chopped orange zest to the pan’s drippings and melt over low heat.

Add honey and let it caramelize briefly. Stir in the spices and cook for a moment, then deglaze with the orange juice. Reduce the sauce to about two-thirds of its volume. Season with salt and pepper, add the orange slices, cover, and simmer 1–2 minutes on each side. Plate the turkey steaks with the orange slices and spice sauce, garnish with lemon balm, and serve.
