Turkey Steaks with Beetroot Puree in the Thermomix

Ingredients
- 250 g pre-cooked beetroot (in large chunks)
- 2 yellow carrots
- 5 g Parsley
- 5 g chives
- 5 g oregano
- 500 g waxy potatoes
- 0.5 garlic clove
- 2 turkey breast fillets
- 75 g sour cream
- Salt

- Pepper

Place beetroot pieces in the Varoma basket, insert the Varoma tray and add carrot strips, ensuring enough space remains open.

Add herbs to the Thermomix bowl, chop for 3 seconds on speed 8 and transfer to a small bowl.

Add 500 g water and 1 tsp salt to the Thermomix bowl, place the cooking insert, add potato pieces. Set Varoma on top and cook for 25–30 minutes on Varoma/speed 1. Meanwhile mix chopped herbs in a small bowl with 1 tbsp soft butter, squeeze in garlic, season with a little salt and pepper, and stir well. In a large pan roast cashews without added fat over medium heat until fragrant, then remove and cool. Pat turkey breast dry with paper towels, lightly pound flat, season with salt and pepper. Ten minutes before the potatoes finish cooking, heat 1 tsp oil in a large pan, sear turkey for 3–4 minutes per side.

Remove Varoma. Use a spatula to take out the cooking insert. Empty the Thermomix bowl, attach the stir attachment, add potato and beetroot pieces, sour cream, beet juice, and a pinch of salt and pepper, then puree for 25 seconds on speed 4.

Spread beetroot puree onto plates. Arrange turkey steaks and carrot strips alongside, sprinkle cashews over carrots. Enjoy with a touch of herb butter.
