Vegan Borscht

Spoonsparrow vegan borscht comes entirely without animal products and is always delicious!

Ingredients

  • 1 onion
  • 400 g cabbage
  • 500 g waxy potatoes
  • 500 g beetroot
  • 1 l vegetable broth
  • 1 tbsp pumpkin seed oil
  • Salt
  • Pepper
  • ground cumin
  • ground coriander
  • coriander leaves (for garnish)

Instructions

    Peel and dice the onion; wash, trim, and shred the cabbage finely.

    Peel and cube the potatoes and beetroot. In a pot, sauté the onion in hot oil until translucent. Add the potatoes, beetroot, and cabbage, then pour in the broth.

    Simmer gently for about 20 minutes. The vegetables should be cooked but still have a slight bite.

    Season with salt, pepper, cumin, and coriander. Serve on plates, garnished with fresh coriander leaves.
