Ingredients
- 1 bunch spring onions
- 3 tbsp oil
- 200 g red lentils
- 600 ml chicken broth
- 4 turkey schnitzels (≈150 g each)
- Salt
- pepper (ground)
- 1 tsp curry powder
- 250 g pineapple chunks (canned)

Clean and slice the spring onions into rings, then sauté in 1 tbsp hot oil in a pot. Add the rinsed lentils and cook briefly. Pour in the chicken broth, bring to a boil, cover, and simmer for about 10 minutes.

Season the turkey schnitzels with salt, pepper, and curry powder. In the remaining oil, fry each side of the schnitzel for approximately 4 minutes until golden brown.

Drain the pineapple chunks and add them to the lentils, seasoning to taste. Plate the cooked schnitzels atop the lentil mixture and serve with rice.
