Turkey Rolls with Wild Rice

Ingredients
- 8 thin slices of turkey breast fillet (about 60 g each)
- 200 g wild rice blend
- Salt
- Pepper (freshly ground)
- 10 g ginger
- 1 clove garlic
- 1 red chili pepper
- 2 tsp sambal oelek
- 1 tbsp oil
- 1 tsp chopped lemongrass
- 250 ml coconut milk
- 2 tbsp crème fraîche
- 1 tbsp lime juice
- lime slice for garnish
Instructions

Bring 400 ml water to a boil with a pinch of salt. Add the wild rice blend and cook covered until al dente, about 20 minutes.

Peel and finely chop ginger and garlic. Slice the chili pepper lengthwise, remove seeds, wash, and cut into thin strips.

Rinse the turkey fillets and pat dry.

Flatten the turkey slices slightly, season with salt and pepper, and spread Sambal oelek over each slice.

Roll up the slices and secure with small wooden skewers.

Brown the rolled meat in oil over high heat until golden brown on all sides.

Add garlic, ginger, chili strips, and lemongrass; sauté briefly.

Deglaze with coconut milk, stir in crème fraîche, and simmer uncovered for about 10 minutes, turning the rolls occasionally. Season the sauce with salt, pepper, and lime juice to taste.

Slice the rolls diagonally and serve with rice and coconut sauce.
