Vegetable Sausage Skewers with Rice

Ingredients
- 250 g wild rice mix
- Salt
- 400 g bratwurst sausage
- 2 small zucchini
- 2 red bell peppers
- 150 g small mushrooms
- 1 Garlic clove
- 4 tbsp olive oil
- 1 tbsp Lemon Juice
- pepper (ground)
- 1 tbsp butter
- 2 tbsp freshly chopped parsley

Cook the rice in salted water according to package instructions.

For the skewers, cut the bratwurst into bite‑sized pieces. Wash and trim the zucchini, slice into rounds. Wash the bell peppers, halve them and cut into bite‑sized pieces. Clean the mushrooms and alternate all prepared ingredients on 8 wooden skewers.

Peel the garlic and press it into the oil. Stir in the lemon juice, season with salt and pepper, and brush the skewers with this mixture. Grill over high heat, turning regularly for about 10 minutes. Occasionally brush with oil during grilling.

Fold the butter into the rice and season with salt and pepper. Arrange the skewers on plates and serve sprinkled with parsley.
