Turkey Roast in Sesame Crust

Ingredients

  • 1 kg turkey breast fillet
  • 1 Organic lemon
  • 15 g ginger (1 piece)
  • 60 g sesame seeds
  • 5 tbsp Soy sauce
  • 2 tbsp orange marmalade
  • 600 g Carrots
  • 1 tbsp Rapeseed Oil
  • 1 tbsp honey
  • 100 ml Vegetable broth
  • parsley
  • Salt
  • Pepper

Instructions

    Rinse turkey breast under cold water, pat dry and remove any tendons if necessary.

    Wash half a lemon hot, pat dry, grate the zest and squeeze out the juice. Peel and grate ginger. Mix sesame seeds with ginger, soy sauce, lemon juice and zest, and orange marmalade; brush this mixture over the meat. Cover and refrigerate overnight.

    Take the meat out of the marination, place in a roasting pan and bake in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for 50–60 minutes, basting with the remaining sauce every now and then. Add a little water if needed.

    Meanwhile peel carrots and slice thinly. Heat oil in a pan, sauté the carrots. Add honey and deglaze with broth. Cover and simmer over medium heat for about 8 minutes. Wash parsley, shake dry, set aside some stems for garnish, chop remaining leaves. Season carrots with salt and pepper, fold in chopped parsley.

    Slice the roast into pieces and serve with the carrot mixture.
